21 Day Fix Approved Turkey Chili

Enjoy this hearty and nutritious healthy meal. Nick and I like to take this recipe for our lunches. I make a big batch and then we divide it up over a few days. It's easy and it's convenient to grab-and-go!

Ingredients:
1 tsp. olive oil
1 large onion, chopped
1 medium red bell pepper, chopped
1 medium yellow (or orange) bell pepper, chopped
1 lb. raw 93% lean ground turkey
1 (28-oz.) can chopped tomatoes
2 cans (15-oz. each) kidney beans, rinsed, drained
1 tsp. chili powder
½ tsp. sea salt
Crushed red peppers (to taste; optional)
12 Italian parsley sprigs, chopped
Preparation:
1. Heat oil in a large saucepan over medium-high heat.
2. Add onion and bell peppers; cook, stirring frequently, for 4 to 5 minutes, or until onion is soft.
3. Add turkey; cook for 4 to 5 minutes, or until turkey is browned
4. Add tomatoes, beans, chili powder, salt, and red peppers; cook, stirring frequently, for 10 to 15 minutes.
5. Divide chili into 6 serving bowls and garnish with parsley if desired.

Egg Cups To Go!

Egg cups easy! They are super quick to put together and only take a few minutes to bake. They are super convenient protein-rich breakfasts or snacks for the whole week. 

Total Time: 35 min.
Prep Time: 15 min.
Cooking Time: 20 min.
Yield: Makes 6 servings, 2 egg cups each
Ingredients:
Nonstick cooking spray
¼ cup unsweetened almond milk
12 large eggs, lightly beaten
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
1 cup steamed broccoli, coarsely chopped
½ cup chopped green bell pepper
1 cup chopped raw spinach
Preparation:
1. Preheat oven to 350° F.
2. Prepare twelve muffin cups by coating with spray. Set aside.
3. Combine almond milk and eggs in a medium bowl. Season with salt and pepper, if desired; whisk to blend. Set aside.
4. Evenly divide broccoli, spinach, and bell peppers between prepared muffin cups.
5. Evenly pour egg mixture over broccoli mixture.
6. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of egg cups comes out clean, and eggs are set.

Convenient Baked Oatmeal Cups


Baked Oatmeal Cups
Make these ahead of time for the whole week and make your mornings a lot easier. They freeze well, too! To reheat, just thaw in the fridge overnight and microwave when you’re ready for breakfast.

Total Time: 45 min.
Prep Time: 15 min.
Cooking Time: 30 min.
Yield: 12 servings, 1 cup each
Ingredients:
Nonstick cooking spray
2 large eggs, lightly beaten
1 tsp. pure vanilla extract
2 large bananas, mashed
1 Tbsp. raw honey
2½ cups old-fashioned rolled oats
1 Tbsp. ground cinnamon
1½ tsp. baking powder
1½ cups unsweetened almond milk
¾ cup chopped raw walnuts
¼ cup raisins
Preparation:
1. Preheat oven to 350° F.
2. Prepare twelve muffin cups by coating with spray. Set aside.
3. Combine eggs, extract, bananas, and honey in a large bowl; mix well. Set aside.
4. Combine oats, cinnamon, and baking powder in a medium bowl; mix well.
5. Add oat mixture to egg mixture; mix well.
6. Add almond milk; mix well.
7. Divide oat mixture evenly between prepared muffin cups.
8. Top evenly with walnuts and raisins.
9. Bake 26 to 30 minutes, or until golden brown and toothpick inserted into the center comes out clean.
Tip: Pecans, cashews, sunflower seeds, dried cranberries, or dark chocolate chips can be substituted for walnuts and raisins.

Busy Mom Pasta Hack



Click my link above to check out a no-carb pasta option using SPAGHETTI SQUASH! Not only is it delicious, but it's extremely healthy. For those of you looking to add more green containers to your 21 Day Fix Meal Plan, this is a green that tastes like a yellow.
Not so sure about a veggie pasta? Try this tip - add 1/2 veggie pasta with 1/2 whole wheat pasta.

I cooked two of these bad boys tonight for my meal plan for the week ahead. I'm making chicken parmesan on a bed of SPAGHETTI SQUASH pasta one night and SPAGHETTI (squash) pie made with cottage cheese and ground turkey.

Pumpkin Power Muffins

Fall is here!!! 
And that excites me because that means apples, pumpkins, fall wreaths, and SWEATERS! I just don't love being HOT so fall in the south is the perfect temperature. Plus, I love wearing boots and jeans! 
A little over a year ago, I had gotten rid of all pairs of jeans except one (my emergency pair in case I had to wear them) because they weren't comfortable anymore. They didn't look good one me and I felt like I was always having to suck it in when I wore them. I couldn't wait to rush home and put my sweats or yoga pants on (even though, they didn't look so hot either). Today, I have four pairs of jeans that I wear and love. 
I do admit, after not doing so well with my meal planning last week and being sick this week (meal plan non-existent), those jeans are far too snug for my liking. So, I'm going to add these PUMPKIN POWER MUFFINS to my meal plan next week and get right back on track. Within a few days of following my 21 Day Fix meal plan, I'll be feeling a lot better!
Total Time: 28 min.
Prep Time: 10 min.
Cooking Time: 18 min.
Yield: 12 servings, 1 muffin each

Ingredients:
1 large egg
1 large egg white
¼ cup pure pumpkin puree
1 large banana, cut into chunks
½ cup all-natural almond butter
¼ cup pure maple syrup
2 scoops Beachbody Whey Protein Powder, Vanilla flavor, or equivalent
½ tsp. baking powder
½ tsp. ground cinnamon
¼ tsp. sea salt (or Himalayan salt)
1 dash ground nutmeg
Preparation:
1. Preheat oven to 350° F.
2. Prepare twelve muffin cups by lining with muffin papers or coating with spray.
3. Place egg, egg white, pumpkin, banana, almond butter, and maple syrup in blender; cover. Blend for 30 seconds.
4. Add Protein Powder, baking powder, cinnamon, salt, and nutmeg; cover. Blend until smooth.
5. Divide batter evenly among prepared muffin cups.
6. Bake 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean.
7. Transfer muffins to rack; cool.

Remember How Good This Feels

Day 91: It makes no sense to me why I ever succumb to temptation- (mine is candy... What's yours?) When I eat right and exercise, I feel SO good! I feel thin, less bloated, energetic, kind, understanding, focused, and less stressed.

So why do I (we) go off the deep end and indulge? It's like a freakin' pendulum! When I make a bad choice, I make a bunch of them! Ugh! Why? Because then I feel like crap, my clothes don't fit well, and I lose my cool.

I'm trying to spend a few seconds after each incredibly fun Turbo Fire workout (how can you not LOVE working out to WIGGLE IT?) to commit this feeling to memory! I love endorphins! I love how I feel mentally when I choose a healthy option over an easy/unhealthy/expensive option (darn you Pizza Hut).

90 days to go... I will keep going! I will remember how this feels so I can do it all over again tomorrow!

Where Ya Been? 94 Days to GO!!!!

Arg!!!

I deserve a Mom-Of-The-Year Award... OR NOT!!! Little miss Kennedy broke her arm LAST Friday and being the tough girl that she is, she complained very little at school, home, or even at GYMNASTICS! Yea! I let her go to gymnastics with a BROKEN ARM! Hmph!

This parenting thing is not so easy, is it? Sheesh! 

In the meantime, my workouts got a little out of whack and my eating did too! But I'm not giving up. I'm going to honestly admit where I'm at and move forward. I have 94 days to continue to push.

So since everything has been a little disjointed in the Coller home, I decided to make up for it by trying a workout I have been putting off for almost two months - Insanity Max:30. Have you heard of Insanity with Shaun T? Well, it's about 100 times HARDER!!! There are very short breaks and only a couple of them. He brings over 300 new moves to this workout program and let me tell you - my heart rate was PUMPING and my core was SCREAMING! I could feel my abs working with every jab, squat, burpee, and jump! I don't think you could complete this 60 day program and not have the abs of your dreams! It's amazing! I am seriously considering purchasing this program for my own use.

Day 97 - Brackets Busted!

How are your brackets doing? I bet many people have flops, huh? Due to a seriously sore throat, ear pain, and a whiny 4 year old who may have broken her arm... I'm snuggling her in bed. Perfect way to spend my rest day!!!

98 Days & A Thank You




98 days to go!!! I want to stop and take a moment and say thank you for joining me in this journey. So many people have stopped me or commented that my journey relates to their journey in one way or another! I can't tell you how much that means to me.

I was very nervous to start this journey. Quite honestly, I was nervous about putting myself out there on social media. I was mostly nervous that people would view my posts as vanity which is the complete opposite of my goal. I've been an aerobics instructor for about 10 years and my proven passion is to help people and I love fitness! I'm learning so much about health and nutrition and boy, have I needed!

So thank you for joining me! I'd love to hear what tips you are picking up, how you are doing with your daily nutrition, and how you are doing with your workouts.

I kicked ASS in my Turbo Fire workout tonight and the stretch felt great! My nutrition was fabulous (minus the diet coke)! My Shakeology fueled me with energy this morning. I'm feeling so good!

99 Problems but a Squat Ain't One

99 days DOWN - 98 to go! Today one of my friends promised me to a pact to do 20 squats every time I went to the bathroom. Well, that was rather funny in heels but I complied! I've done 100 squats that I normally would not do in a day and 20 was enough each time to raise my heart rate. This pact was part of the Build Your Booty free buns challenge my friends and I are hosting this month. We offer challenge groups ALL the time and the squats are just a sliver of the madness we conger up!

My nutrition went well today though I can feel the effects of allowing some sugar in my diet this past weekend. I find myself wanting it more than usual. Once I started Shakeology, the sugar cravings curbed which I attribute to a complete miracle (consuming 70 superfoods in a yummy shake is a miracle - THANK YOU SHAKEOLOGY)! Every now and then, I indulge though and when I do - I immediately enjoy it (Mmmm) and then regret it a day later because I find myself wanting more.






Sugar is like that. I read a study once that reported sugar to be more addictive than cocaine! Say what??? Think about that next time you ponder the purchase of a candy bar in line at the grocery store.

Today, I found myself having a difficult time passing up a piece of my favorite cake. I held the desire at bay for hours and then when I finally gave in, I had a very small sliver and was completely satisfied. I'm not going to beat myself up. In fact, I'm proud that I only had one, SMALL serving. I chose one with very little frosting and it's not going to ruin me.

Tomorrow is a new day and a chance to conquer my goals. I started looking at bikinis online tonight. I've never made a single purchase from Victoria's Secret and I'm honestly considering taking the plunge as I get closer to meeting my goals.

The Countdown is On... 100 Days and Counting

Today begins my 100 day journey...

In exactly 100 days, I will be embarking on a journey that I have waited a long time for! 100 days from now I will be boarding a plane with my husband to Jamaica. It is our first trip since our honeymoon eight years ago!

Having a four-year-old daughter has been amazing, however being far away from family has been difficult. In her four years we have probably had less then 10 dates.we cannot call up family and ask for a favor and we feel bad asking friends.

Although our marriage is strong, time with your spouse is important! I've been planning and saving for this trip for almost 3 years. The reality is, it's finally about to happen! I'm so excited for time alone with my husband also a little fearful, to be honest. We don't get much time alone so it's almost going to be like we are rediscovering one another. I often find myself calling him daddy instead of Nick and our snuggle time in bed is often replaced by snuggle time with a preschooler. Do you know what I mean? Can you relate?

So today I begin a 100 day journey to get myself ready for this trip. In the past six months of being a beach body coach, I have lost 15 pounds. But my journey is not over! I have a goal to be a comfortable size 6 by the time we leave for this trip. I do not want to put a pound marker on my goal because I really don't know what number it feels like for me. Instead, I know how much better I feel going from a size 12/14 to a size 8/10 now. Therefore, I feel that one more size down is a reasonable yet difficult girl for me that I will have to focus on with all the energy I can muster.

21 Day Fix/Extreme Approved Nachos

INGREDIENTS:
2 small corn tortillas, crushed (yellow)
1 red container of ground turkey (at least 93% lean) cooked in taco seasoning
1 green container of mixed veggies (I used tomatoes and lettuce)
1 blue container of mozzarella cheese
1/4-1/2 container of salsa (based on your preference)

1. Brown your ground turkey
2. Bring turkey, water, and taco seasoning to a boil and then simmer according to the amount of turkey used
3. On broil, melt cheese on crushed tortillas. (I also cooked my tomatoes on them.)
4. Top with meat, veggies, and salsa and serve IMMEDIATELY!

21 Day Fix Approved Ziti

Ziti Ingredients

1/2 box Whole Wheat Pasta
1 red container Fat Free Cottage Cheese
1 jar natural/clean Tomato Sauce
1/2 lb Lean Ground Turkey
1/2 c Mozzarella Cheese, shredded
1 tsp Balsamic Vinegar
1 tsp Honey
1 tbsp Garlic Powder
1 tbsp Onion Powder
1 tbsp Italian Seasoning
1 tbsp Oregano
1 tbsp Basil
1 tbsp Parsley
1 tbsp Black Pepper

Directions:
Preheat oven to 350 degrees.
Cook the noodles until al-dente. While pasta is cooking, brown the ground turkey. Drain turkey of excess fat renderings after cooking. In a large bowl, combine the ricotta, pasta sauce, honey, seasonings, cooked ground turkey, and the cooked and drained noodles. Stir until well combined.
Pour mixture into a 13×9 pan. Sprinkle Italian cheese and parsley on top. Bake at 350 for 20 minutes, or until the cheese has melted and bubbly.

Makes 6-8 Servings (Use your Green container to measure your portion size.)
